Summary: The mechanism of fungicides: From a practical standpoint, when microorganisms no longer grow or reproduce after the application of chemical fungicides, we say they are dead, meaning these chemical fungicides have a bactericidal effect. After microorganisms are treated with chemical fungicides, many of their characteristics will change, such as growth, reproduction, morphology, spore formation, spore germination, spore swelling, cell mitosis, cell permeability, respiration, spore color, and other physiological, biochemical reactions and metabolic activities will be affected, ultimately resulting in the inhibition of microbial growth and reproduction, or even killing microorganisms.
So, how do fungicides inhibit or kill microorganisms? First, the fungicide contacts and is adsorbed by the outer cell membrane, and then enters the protoplasm through the cell membrane. Various fungicides, due to their different functions, act on different parts of microbial cells, inhibiting the growth and reproduction of microorganisms, or even killing them.
The sites of action of fungicides can be roughly divided into those that act on various metabolic mechanisms essential for maintaining the life of microbial cells, such as cell wall synthesis, cell membrane function, protein synthesis, nucleic acid synthesis, energy metabolism, etc., or those that act on various enzyme systems related to these metabolic mechanisms.
Generally speaking, the sites of action of halogens, alkylating agents, phenols, quaternary ammonium salts, and biguanide fungicides are to destroy the cell membrane, react with nucleic acids, proteins, and other cellular components, etc. However, the chemical structure of the fungicide, the microstructure of the microbial cell, and the environment of action all have a great influence on the mechanism of action of the fungicide.
Some preservatives used in food preservation, such as benzoic acid, sorbic acid, and propionic acid, often inhibit the enzyme systems related to acetic acid metabolism, glycolysis, the tricarboxylic acid cycle, and oxidative phosphorylation, thereby inhibiting microbial metabolism; they also break the cell membrane, inhibit the absorption and transport of substrates, and denature proteins, etc.
